Weekly Menu: September 15- September 21

Saturday
to do: pull ground pork and beef and liver from the freezer, soak oats
Breakfast: fried eggs and toast with jam
Lunch: apples and cheese sticks
Dinner: Eat out! 
Treat: ice cream sundaes

Sunday
to do: soak beans, pull chicken from freezer
Breakfast: peanut butter porridge
Lunch: leftovers
Dinner: meatloaf (with liver!), mashed potatoes, sweet potato wheels, caramelized brussel sprouts and carrots

Monday
to do:
Breakfast: yogurt topped with fruit 
Lunch: leftovers, peanut butter toast
Dinner: Easy chicken enchiladas, bean and rice casserole, steamed cauliflower
Treat: sourdough apple pie, homemade ice cream

Tuesday
to do: soak muffins
Breakfast: scrambled eggs, sourdough toast, grapes
Lunch: leftovers
Dinner: Vegetable Stir-fry with coconut rice

Wednesday
to do: pull the sausages
Breakfast: Sourdough chocolate chip muffins
Lunch: leftovers
Dinner: egg drop soup, sourdough toast
Treat: finish off some of our previous treats

Meals from around the web

Trying a few new meals this month and am putting them all in one easy-to-find place.

Creamy grilled chicken piccata

Sourdough sugar cookies

Zucchini and leek soup -- this was a good soup! I didn't add the potato (we can't eat nightshade family foods right now) and didn't have any un-soured cream. So we just used cheese instead.

Chicken avocado burritos  --Very good! Just takes a little bit of time! I made tortillas this time...next time I think using the ones from Costco or something would help. Oh- I also cooked them in lard.

Slow cooker artichoke dip  --We have made this before and love it! I used the jarred artichokes from Trader Joes, and since they are already seasoned, I don't add the leek soup mix. I also didn't add the lemon and it was just fine.

Creamy chicken, mushroom and wild rice soup   -- this was so yummy! The kids weren't as found, but hubby and I really liked it!

Monday

Lunch: cream cheese on sprouted bagels, cheese, apple slices
Dinner: Sloppy cornbread casserole(except I used a different recipe for both), fried okra

Tuesday
to do: soak steel cut oats
Breakfast: strawberry yogurt smoothies
Lunch: leftover casserole, bananas
Dinner: Leftover Chicken Pot Pie, coconut rice

Wednesday
to do: bake granola
Breakfast: soaked porridge with apricots
Lunch: leftovers, fruit
Dinner: Sprouted English muffin sandwiches(egg mcmuffin style), sauteed zucchini
Treat: Peach yogurt (made with local peaches!)

Thursday
to do:
Breakfast: yogurt and granola
Lunch: oat cakes, fruit, cheese slices
Dinner: Picnic roast, sweet potato wheel, corn on the cob

Friday
to do:
Breakfast: fried eggs, bacon toast
Lunch: leftovers, fruit
Dinner: milk-free mac and cheese, sautéed zucchini

Saturday
to do:
Breakfast: sourdough waffles, eggs
Lunch: picnic style lunch with leftovers
Dinner: Coconut Beef soup (using leftover beef and pork meat), sourdough bread

I haven't quite gotten the hang of making and sticking to a menu plan, but I keep on trying in the hopes that I'll one day get there again!

Since things have calmed down just a little for our family, I thought I'd attempt to do a food menu again. We'll see how it goes this time around! :)

Einkorn Chocolate Chip cookies

I've had a 1 lb box of Einkorn berries in my pantry to try out for quite some time now. Since any wheat (whole wheat especially, but even Kamut and Spelt) send my sugar levels through the roof, we normally stick to gluten free flours when we want treats. I decided to give Einkorn a go though- it's SO much better for you than other wheats! And I'm happy to report that I didn't seem to suffer any from eating a couple last night- Hooray! It's still pretty expensive, so we probably won't be eating it too much, but it's nice to know there's something else out there we can use.

Einkorn Chocolate Chip Cookies

ingredients:
* 8 TBSP softened butter (115g)
* 3/4 sucanat (150g)
* 1/2 tsp salt (3g)
* 1/2 tsp baking soda (3g)
* 1 med. egg
* 1/2 tsp vanilla (3g)
* 3/4 cup chocolate chips (115g)
* 1 3/4  cups einkorn flour (210g)

directions:
1. Cream the butter, sugar, salt and soda together until combined well.
2. Add egg and vanilla- mix until emulsified.
3. Mix in chocolate chips gently.
4. Sift the flour before measuring, then mix into other ingredients until fully incorporated.
5. Drop by TBSP onto greased cookie sheet, about an inch apart.
6. Bake at 325 degrees for about 13 minutes.
7. Let cool for 5 minutes before removing from tray.

**Some notes**
-I did weigh out my ingredients- except for the butter and vanilla.
-Sifting the flour before weighing was a bit of a pain, but well worth it.
- I didn't have any chocolate chips, so instead chopped up a bar of Organic dark choc. (soy free!) from Trader Joes. Worked perfectly.
- Next time I think I'll use less chocolate chips. I like to taste the cookie, (and these ones taste amazing!) and the chocolate is a bit overwhelming.
