Weekly Menu: April 29- May 1

It's too hard for me to plan out the whole week, when we're not even finished with our current shopping 'week'! So I will be switching over to posting these mid-week, which is when I do my shopping. The Farmer's Market is also starting to pick up in our area, which will make it very interesting- doing our grocery shopping mid week and our veggies on Saturday! O'well- it's what we do for good, healthy food!

Monday
to do: saok potatoes in a.m., soak oatmeal bars
Breakfast: smoothies, fried eggs
Lunch: leftover soup, bread
Dinner: Roast, roasted potatoes, sauerkraut, steamed green beans

Tuesday
to do: soak tortillas, soak crackers
Breakfast: leftover roasted potatoes, fried eggs, leftover bacon/meatballs
Lunch: soaked oatmeal bars, cheese, bananas & almond butter
Dinner: Tacos topped with creme fraiche, avocados, cheese, and salsa
Treat: choc. pudding pops

Wednesday
to do: pull sausage
Breakfast: leftover porridge (I always make more than enough on Sundays)
Lunch: sourdough crackers, cheese, apple slices, pickles
Dinner: Beef enchiladas (using leftover roast instead of chicken), veggies
