Weekly Menu: February 25- March 3

My husband was recently in a motorcycle accident, so things might not go according to plan. I'm trying to cut myself some slack in the kitchen, while also not compromising the standards that I feel will help his body to heal quicker and help the rest of us to deal with the stress this accident has put on our family.

Monday
to do: soak pancakes
Breakfast: scrambled eggs, with kale and sausage, toast
Lunch: leftovers
Dinner: leftovers, hot dogs, kraut

Tuesday
to do: soak granola
Breakfast: sourdough pancakes
Lunch: leftovers, bread, fruit
Dinner: chicken and cheese quesidillas topped with creme fraiche and avocados, veggies

Wednesday
to do: pull pork
Breakfast: oat cakes topped with creme fraiche and honey (or jam)
Lunch: leftovers, fruit
Dinner: Salmon and rice casserole, caramelized brussel sprouts and carrots

Thursday
to do: pull ground beef, cook granola
Breakfast: cheesy egg toast
Lunch: leftover casserole, fruit
Dinner: leftovers

Friday
to do: soak lentils, soak tortillas
Breakfast: yogurt and granola
Lunch: leftovers, fruit
Dinner: spaghetti (using rice noodles) with pork meatballs, steamed broccoli

Saturday
to do: soak porridge
Breakfast: coffee cake, yogurt
Lunch: leftovers, fruit
Dinner: Enchilada casserole, veggies

Sunday
to do:
Breakfast: porridge
Lunch: leftovers, fruit
Dinner: black bean soup, sourdough cornbread
