Not being used to 3 day weekends, this one threw us for a loop! We (kind of) had everything on my menu, just not on any of the right days. Some meals, like the white bean and green soup we just haven't gotten to yet. Hopefully this will be the week...
Thursday

Breakfast: leftover spinach, egg and bacon bake, muffins
Lunch: Nibble Tray
Snack: pudding pops
Dinner: Chili and Cornbread
Friday
to do: pull ground beef
Breakfast: Porridge, fruit
Lunch: sandwiches and smoothies
Snack: no bake granola bars, apple slices
Dinner: slow-cooker chicken, sweet potato wheels, California salad
Saturday- Highland Games in Glasgow KY!
to do: soak rice for pudding
Breakfast: gluten free waffles/pancakes, strawberry milkshakes
Lunch: Picnic lunch (Pickles, hard boiled eggs, carrot sticks, cheese, apples)
Snack: coconut popcorn, oatmeal peanut snack bars
Dinner: Taco salad

Breakfast: Eggs and leftover pancakes
Lunch: leftovers, caramelized carrots and brussel sprouts
Snack: (no snack)
Dinner: Beet soup and sourdough bread, coconut rice pudding
Monday

Breakfast: yogurt and granola (w/ fresh fruit)
Lunch: leftover beet soup, sandwiches
Snack: cheese, nuts, raisins
Dinner: White bean and greens soup, sourdough bread

Lunch: grilled cheese, veggies
Snack: smoothies
Dinner: chicken enchiladas, salad

Breakfast: leftover spinach & bacon bake, frozen pancakes
Lunch: Oatmeal bars, veggies
Snack: hard boiled eggs
Dinner: Leftover soup, sourdough bread
