I have to change my weeks around a bit...since we started getting our CSA box a few weeks ago, my menu and shopping weeks actually end on Wednesdays and begin on Thursdays. So these three days finish me off for this 'week'.
Monday
to do: soak pinto beans, soak english muffins
Breakfast: coconut flour muffins (w/ strawberries added in)
Lunch: Nibble Tray/ leftover soup
Snack: coconut popcorn
Dinner: BBQ chicken legs and spare ribs, bacon beans, veggies
Tuesday
to do: soak navy beans
Breakfast: egg mc-muffins (using this sourdough english muffin recipe)
Lunch: leftover enchilada salad, sandwiches
Snack: apples and nuts
Dinner: Mexican Pizzas
Wednesday
to do: soak coffee cake
Breakfast: yogurt and granola, fruit
Lunch: leftover pizza, fruit
Snack: No bake granola bars
Dinner: White beans and greens soup, homemade sour dough bread
