This past weekend I spent most of my time in the kitchen preparing purees for our meals this week. We stumbled upon the cookbook, Deceptively Delicious, from a friend of ours (Thanks B!), and I am SO excited to try more of her recipes!! So far we have tried:
Applesauce muffins (with applesauce and pureed carrots)
Chocolate cupcakes (with avocado puree)
And loved them both!!
We have many more on the menu for this week too! I think it's so great to be eating meals that contain so many veggies!!
*Explanation of this weeks menu:
The recipe for Mondays dinner is Spaghetti and Meatballs. We ordered an extra spaghetti squash from Abundant Harvest, so we're using that in place of the pasta noodles. This recipe using butternut puree in the meatballs, and carrot puree in the sauce. Yum.
Tuesday's meal calls for butternut squash in the filling for the grilled cheese, and red pepper puree in the salsa dip.
Thursday's meal uses sweet potato, butternut or red pepper purees.
And for our pizza and salad night, I will be making our own ranch dressing!
So excited!!! :)
